Chocolate and Cherry Cake

This no bake fidge cake is a real treat, it's rich in fruit and nuts, finished off with luxurious orange-scented chocolate. The best bit is it only takes 15 minutes to prepare.
Serves 10
200g of good quality rich dark chocolate
zest of 1 orange
50g butter
4 tbsp of golden syrup
175g of shortbread
100g of crystallised stem ginger, roughly chopped
100g of whole blanched hazelnuts
200g of good quality glace cherries
1 tbsp of cocoa powder for dusting
1 tbsp of icing sugar for dusting
1. Break up the chocolate into a small pan, then add the butter, syrup and orange zest. Heat very gently, stirring from time to time, until smooth and glossy.
2. Place the shortbread into a bowl and break up into small pieces with your fingers. Stir in the ginger, hazelnuts and cherries, then pour in the chocolate mixture and stir until coated evenly.
3. Tip the mixture into a 20cm loose-bottomed cake tin, patting down carefully. Chill for at least 2 hours. Dust the surface with cocoa powder and icing sugar before slicing and serving.
